My mother and I babysat my niece and nephew over the weekend and my nephew is the king of chicken nugget kid’s meals. We asked him what he wanted for supper and he said "Ry-ry, (french fries) chick, coke, happy toy." Well Mama didn’t have the money for a fast food run so I made homemade "chick" and he was quite content. Now, I don’t fry too much because of the extra hassle and mess so these are oven "fried" and just as tasty as the deep fried.
Easy Peasy Chicken Fingers
Easy oven fried chicken tenders.
Prep time: 15 minutes
Cook time: 25 minutes
Total time: 40 minutes
Ingredients
- 1 1/2 pounds boneless skinless chicken breast
- salt
- pepper
- 1/2 cup mayonnaise
- hot sauce
- 1 1/2 cups plain bread crumbs
- 1/4 to 1/2 teaspoon garlic powder
- 1/4 to 1/2 teaspoon onion powder
- 1/2 cup (1 stick) butter or margarine
Cooking Directions
Heat oven to 375 degrees.
Slice chicken into desired size, season both sides with salt and pepper. In shallow bowl mix together the mayo and a few shakes of hot sauce. I used probably half a dozen or so. The good thing about using mayonnaise is you can taste the mixture to see how spicy it is before you add the chicken.
In another shallow dish mix together bread crumbs, onion and garlic powders. Coat chicken in mayonnaise then roll in breadcrumbs.
Place margarine in a baking dish and put in oven. When it is melted remove pan from oven and immediately place chicken in the pan. Return to oven and bake for about 25 minutes or until chicken is thoroughly cooked.
