
Welcome to Kid friendly foods week here on Cookin’ Mimi. It’s back to school time for most of the US and the first recipe would be perfect to tuck in to lunch boxes or as an after school snack.
I love cookies. Two of my favorites are oatmeal and peanut butter and this recipe combines the two in a very easy and delicious recipe. And as a bonus it does incorporate whole wheat flour so it’s a bit healthier than some other cookie recipes.
Peanut Butter Oatmeal Cookies
Ingredients:
- 1 ¾ cups packed brown sugar
- ½ cup shortening
- ½ cup peanut butter-if you have a peanut allergy you could substitute softened butter in the same amount.
- 1 teaspoon vanilla
- 2 eggs
- 1 cup self rising flour
- 1 cup whole wheat flour
- 3 cups old fashioned oats
Directions:
Turn oven to 350 degrees. In a large bowl beat sugar, shortening, and peanut butter until fluffy. Add the vanilla and eggs and mix until blended. Add both flours stirring with spoon until just combine. Stir in oats.
Drop dough by rounded tablespoons on to ungreased cookie sheets and bake 10 to 14 minutes or until lightly browned. Cool a couple of minutes then remove from sheets to finish cooling. Makes about 30 cookies.
