I know barbecue and burrito are two words that seem an unlikely match but this is one of my favorite ways to eat barbecue. I first had a barbecue burrito at the same restaurant I had barbecue nachos. This is a prefect recipe to use up leftover chicken, beef, or pork.
- 8-10 Flour tortillas
- 2 or more cups of shredded meat. I had shredded pork roast
- 1 cup or so of your favorite barbecue sauce. We like KC Masterpiece
- Shredded cheese
- Your favorite burrito toppings. Sliced onion, lettuce, sour cream and hot sauce would be excellent
In a medium sauce pan heat shredded meat and barbecue sauce until hot. Heat tortillas in a dry skillet until warmed and pliable. Add the barbecue mixture to the tortillas and top with cheese and other desired toppings. Fold and serve along refried beans if desired
