I have a thing for jalapenos. Evidently I have a thing for jalapenos and bacon as well. This a twist on my Jalapeno Ranch Potato Salad and it is so good.
Creamy Jalapeno Bacon Potato Salad
A new take on the usual potato salad. Tender potatoes in a creamy dressing meets crunchy bacon and a slight bite from the jalapenos.
Prep time: 20 minutes
Cook time: 30 minutes
Total time: 50 minutes plus chilling time
Ingredients
- 2 to 2 1/2 pounds potatoes, peeled and cubed
- 3 or 4 slices bacon, crisply cooked
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1-2 Tablespoons jarred jalapenos, diced if desired
- To taste salt
- To taste black pepper
Cooking Directions
In a 3 quart or larger sauce pan cover potatoes with water, add salt, and cook over medium heat until fork tender. Drain potatoes and set aside to cool slightly.

Where have I been and how did I miss this recipe?! Better late than never, I’ll be trying this one soon.
Visiting from Eat at Home. My husband would love this! I’ve never thought to add jalapeños to my potato salad, and of course bacon makes everything better. I’ll be pinning so I remember to try it. Thanks for posting!
