Smoked-sausage-and-peppers

This is a perfect weeknight main dish. It has very few ingredients, cooks in a snap and little prep and clean up. If I had onions on hand the night I made this I would have thrown them into the mix as well and I highly suggest you add them.

Smoked Sausage with Peppers

Ingredients:

  • 1 pound smoked sausage, cut into large chunks
  • 2 bell peppers,cut into large strips. I used a mix of red, yellow and green
  • 1 clove of garlic, minced
  • 2 Tablespoons water

Directions:

In a skillet over heat, lightly brown the sausage. Add the garlic and peppers. Cook for  2-3 minutes. Add the water and cover. Cook covered for 5 minutes or until peppers are as tender  and the sausage is brown as you like.

    First, those look divine! I know that’s a weird word for sausage, but to my pregnancy-hazed eyes, that’s the word that comes to mind.

    Also: love “Mimi!” That’s what my mom wants to be called instead of grandma. We’re expecting our first this Feb, so she doesn’t have long to wait!
