This is definitely not the usual slow cooker fare. Or at least isn’t what comes to mind when people think of slow cooker meals. Tender chicken served with potatoes in a flavorful lemon-Dijon sauce accented with dried oregano adds a gourmet flair to the plain chicken and potato dinner.
Lemon Dijon Chicken with Potatoes
Tender chicken served with potatoes in a flavorful lemon-Dijon sauce accented with dried oregano adds a gourmet flair to the plain chicken and potato dinner.
Prep time: 15 minutes
Cook time: 3 to 7 hours
Total time: 3 1/4 hours to 7 1/4 hours
Ingredients
- 1 1/2 pounds potatoes, cut into chunks
- 1 small onion, wedged
- 1 Tablespoon quick cooking tapioca
- 1/2 teaspoon salt
- 3 pounds meaty chicken pieces, skinned
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon lemon zest
- 1/4 cup frozen lemonade concentrate, thawed
- 3 Tablespoons Dijon mustard
Cooking Directions
In a 4-6 quart slow cooker layer the potatoes and onions. Sprinkle with the tapioca and top with chicken. Season chicken with salt, pepper and half teaspoon of oregano. In a small bowl whisk together the lemonade, Dijon, lemon zest and half teaspoon of oregano. Pour over chicken and potatoes. Cover and cook on low 6-7 hours or on high for 3-4 hours.

What is the purpose of the Cooking Tapioca? I have never used this before. Can you make the recipe without it?
The quick cooking tapioca acts as a thickener.It seems to be used more in fruit pies.
I don’t think it would hurt anything to leave it out since the potatoes absorb a lot of the liquid.

You could probably freeze the chicken and sauce before cooking then thaw and add potatoes and continue on but I wouldn’t freeze the potatoes because they might get bushy or meal.
