Hello and welcome to Cookin’ Mimi: Everyday Delicious for the Home Cook. Most people I know are quite busy and don’t have the time to cook complicated meals on a regular basis but they don’t want to sacrifice taste for simplicity.I say you can have meals that are quick and delicious any night of the week no matter how much time or money you have.

Living in a small town in the Deep South I don’t have access to many of the fancier ingredients popular on cooking shows and my recipes reflect that. Quite a few of my favorite recipes, like my Cajun Chicken Pasta, were pulled together from items in my pantry and refrigerator.

Cooking has been a life long passion of mine. It all started standing in a chair next to my granddaddy helping make buttermilk biscuits at the age of two or three. I had my first “recipe” published when I was just four years old. A food blog just seemed like the natural next phase in my culinary adventures.

I try to abide by Matthew 22:36-40 and Micah 6:8. I call myself a “double Southerner.” I’ve lived in both Southern California where I developed my deep love for Mexican food and the Deep South where I embraced the classics my mother and her family grew up eating.  When I’m not cooking or blogging I can be found watching The Wiggles, SpongeBob, and Bubble Guppies with my niece and nephew. I also love Dr Pepper, chocolate, spicy food, books and music.  I am also a member of Tasty Kitchen, Pinterest and blog at Small Town Pilgrim.
