Ham-and-Muenster-Panini

Grilled cheese sandwiches are one of my favorite quick lunches.  Deli ham and Muenster cheese layered between sourdough bread is a more upscale version of  a classic.

Ham and Muenster Panini

Ingredients:
  • 8 ounces deli sliced ham
  • 8 slices of Muenster cheese
  • 8 slices of sourdough bread
  • softened butter
Directions:

Tear ham into bite sized pieces and divide into fourths. Spread a small amount of softened butter on four slices of bread, place bread buttered side down on a Panini press, indoor grill or grill pan heated over medium heat. Place one slice of cheese, the ham, the other slice of cheese and top with second slice of bread. Close press or grill. If using a grill plan place a plate or cookie sheet on top of sandwiches and add something heavy as a weight. Cook until golden and cheese is melted.

Serves Four

Chef’s Salad

Salads are one of my favorite warm weather foods and the addition of meat, hard cooked eggs and cheese takes this from side to main dish. The bonus of this is if you can get pre cooked eggs at the deli or refrigerator case at your local grocery it is a no cook meal.

Chef’s Salad

A great main dish salad for those times when you don’t want to heat up your house.

Prep time: 15 minutes

Total time: 15 minutes

Yield: 4 servings

Ingredients

  • 4 cups washed mixed salad greens
  • 1 red onion, sliced
  • 1 tomato, cut into wedges
  • 4 hard cooked eggs
  • 3/4 to 1 pound ham
  • 4 ounces cheese. I used sharp Cheddar
  • salad dressing
  • croutons
  • other toppings such as olives, bacon, broccoli, nuts and seeds

Cooking Directions

Divide greens between four plates. Top each plate with 1/4 each of onion, tomato, egg, ham, cheese, dressing and any of the optional toppings if desired. Serve immediately.

Hot Ham and Cheese Sandwiches

Now this probably wins the prize for the easiest recipe I will ever post. I almost hate to use the word recipe but it technically is one. This is fast, easy, kid pleasing and can be made entirely of leftovers so it is economical.

Hot Ham and Cheese Sandwiches

Ingredients:

  • Ham
  • Dinner Rolls or Hamburger Buns
  • Cheese

Directions:

Preheat oven to 325 degrees. Place opened rolls on baking sheet. Top each roll with one or two slices of ham and cheese. Close rolls and bake for about five minutes or until the cheese has melted and ham is warmed. Serve immediately
