It’s day three of Football Favorites week here on Cookin’ Mimi. This is a sandwich I came up with one day when I wanted something a bit more involved than my usual ham or grilled cheese sandwich. I am definitely glad I did.
Buffalo Chicken Sandwich
The flavors of Buffalo wings in a sandwich
Yield: 4 sandwiches
Ingredients
- 4 sub rolls or hoagie buns
- 4-8 frozen breaded chicken fingers
- To taste hot wing sauce
- 4 slices of mozzarella cheese
- Various amounts toppings such as lettuce, onion, and tomato
- To taste mayonnaise, ranch or blue cheese dressing
Cooking Directions
Bake chicken fingers according to package directions.
Remove from oven and toss with wing sauce. Place coated wings on cookie sheet and top with cheese. Bake for several minutes until the cheese melts and begins to brown.
Spread sub rolls with the mayo or dressing. Place chicken fingers on roll and add desired toppings.
Variations: Instead of breaded chicken you could use plain baked or grilled chicken. You could chop the chicken into smaller pieces and server on small rolls such as the Hawaiian Sweet rolls for more of an appetizer.
