Fluffy Yeast Rolls


Homemade rolls are one of my favorite parts to any meal and they make holiday meals even more special. These are pretty simple to make and have a delicious flavor. I normally make any yeast dough in my stand mixer so I will include directions for that as well as by hand.

Fluffy Yeast Rolls


  • 2 (0.25 ounce packages)  yeast This is 5 teaspoons if you’re using bulk yeast
  • 2 1/4 cups warm water
  • 1/2 cup plus 1 Tablespoon sugar
  • 1/4 cups shortening or butter
  • 2 teaspoons salt
  • 2 eggs
  • 6 1/2-7 cups all purpose flour. If you want you can substitute whole wheat flour for 3 cups of the all purpose.
  • 1/4 cup butter, melted.


In a bowl or large measuring cup dissolve yeast and 1 tablespoon sugar in warm water. Let the mixture sit until foamy.

In a large mixing bowl or bowl of as stand mixer mix together the yeast mixture, 1/2 cup sugar, shortening, salt, eggs, and 3 cups of flour. Beat until smooth. Stir in enough flour to make a smooth dough.

Turn dough out onto a floured surface. Knead until smooth and elastic, about 6-8 minutes. If using a stand mixer, knead using dough hook on speed 1 or 2 for the same amount of time.

Form dough into a ball. Place ball in a greased bowl, turning once to cover the top. Cover and let rise in a warm, draft free place for an hour or until doubled in bulk.

When dough has doubled in bulk, punch down and divide in half. Roll each half into a 10” by 14” rectangle. Brush with 2 tablespoons of melted butter.  Cut the dough into 1.5 inch wide strips. You should have about eight 10 inch long pieces of dough from each rectangle. Cut those strips in half giving you 16 from each rectangle and roll up, pinching ends to seal.

Place rolls on greased baking sheets and cover. Let dough rise for 30 minutes. Bake in a preheat 375 degree oven for 11-15 minutes or until browned. Serve warm with butter.

Yields approximately 32 rolls.
